Why are bullhorns so popular on SS/Fixed?

Ditto. My cousin who rode mostly bmx all his life has risers on his fixed gear and he can keep up with anyone. Reminds me of Garrett Chow from Mash SF with his risers on a pursuit frame. Doesn't look as nice but people can do whatever they want to their own bikes. Can't hate on preference and comfort.

I use bullhorns because like others I rode drops on my roadbike and love the hoods and corner positions. Sometimes I would like the tuck of the drops (for wind) but otherwise really love them. I find I have all kinds of leverage I can wrench on when climbing or having to stop quickly, as well as being able to be upright and visible for carving through traffic.
Lots of hand positions really help a lot, especially with long distances - I rode 200k on Tuesday with them and was very grateful for having a lot of choice to help my wrists and hands out.

I have the stock bars on my Dawes SST which I guess are more like Pursuit bars, I like the drop and the fact that I can angle them upwards slightly for a comfortable lean and reach. My brother has true Bullhorns on his single and though they feel good for out od the saddle riding but I like my bars better seated riding. For the riding I do bullhorns and their relatives are more comfortable than either Risers or Drops....

I just took a trip on my friends bullhorns and they were incredibly comfortable. He was also using old tubes tied with electrical tape on the ends.
I found a set of old aluminum bars I'm going to chop and try this with once I get my own fixie completed.

i put bullhorns on my bike because i get a lot of comfortable hand positions which are perfect for getting enough leverage to climb or unweight the rear wheel for skids, etc. i rode drops for a while but decided it was pointless cause i never ended up actually riding the drops because it was too awkward if i needed to stop quick (i ride brakeless)

I just put bullhorns on my bike and I'm really liking them. They don't quite have the stable leverage of moustache bars, but they destroy flat bars for utility and comfort.

I just put at set of bullhorns on my single speed and I have to say they are quite comfortable and give you great positioning for street riding. They also make climbing hills a little easier than with risers.
I can imagine the extra leverage would be great for stopping when riding fixed too.
