FG to SS

I have 2 fixed gear bikes: a 05 chrome bianchi pista and an IROSE. I bought the bianchi right out of school--it was my first "real" bike and all I could afford. I used it for riding around town, bike paths, etc. In the last few years I have gotten more serious about cycling and have been commuting to work, doing long weekend charity rides, and getting into offroading. My pista has become somewhat of a frankenbike, and I feel it is outlived its purpose in my stable of 2 FG bikes, a road bike, and a mountainbike. I considered selling the IRO, but it has much nicer components, and I am somewhat attached to it, as I built it up. (I use it mainly as a sunday recovery ride bike). I would like to sell the pista and replace it with a singlespeed that I can use for all weather commuting, fireroads, and light duty offroad.

Any suggestions on what to get to replace it? I was thinking of either a Salsa Fargo or Singular Gryphon.

Also, any suggestions on what a good asking price would be for a 05 pista with velocity deep vs would be appreciated.
