the tube on the front connects him to the tow vehical to get him to speed (I presume)
bars don't manner a lot when you are drafting a wall. They also won't accedently clip the tow bar (that would blow)
a rear brake isn't needed for a speed attempt ant would likely lock up quickly. He just needs one brake to feather his speed down. No panic stopping at highways speeds on sand.

You multiply the gain. Suppose that each chainring were 60t and the cogs were 15t, then that setup would be the equivalent of 240 x 15, or 400+ gear inches. As thirdgenbird says, you can't get a chainring that big without hitting the ground (or crotch), and even if you could it would likely be as heavy as the rest of the bike.
