Being vegan is easy if you live in any good sized city, it only gets difficult if you are traveling or live in a small town.

I understand the whole "fad diets" thing... my last gf was a dietitian in training and she was constantly changing her diet and always singing praises about whatever she was or was not eating - sounds like that placebo effect to me.
......She also thought GMO's, chemtrails, and gluten were all a part of a plot devised by the illuminati to mind control the population and keep everyone complacent. NWO. so there's that
For myself however, I've had sensitivity to other foods in my lifetime i've been to the allergist for so it makes sense to me even though as @prooftheory pointed out - it's self diagnosed with no professional diagnosis.
I'd rather try it out for a while and see how well it works. It's not like I need to lose weight or anything either sitting at 180lb 6'1" i think i'm relatively average and fit from cycling..
I'm mostly tired of being fatigued all the time and the chronic headaches.
I've also heard of people doing this just for a little while to "reset" their body and everything- which also seems to have value to it.

i tried it last year and i got through about a week and a half. i just dont have the patience to plan out and prepare every meal ahead of time.
i dont like to eat out much either, not like there are a lot of vegan options on the island anyway
my little experiment got me eating a lot better in general though, i consider myself vegan-ish now. i have a carnivore meal maybe 1-2 times a month, rarely red meat anymore. every other week i try and strictly eat vegan meals, otherwise its mostly vegetarian and as vegan as possible within my patience level. been almost a year now and i just feel less tired and just better overall, its great for expanding your palette ill tell you that much

I just spend an hour cooking lunches every Sunday night and then have a week of lunches with a lot of fruit/veggies as mid day snacks/breakfast. Black beans, brown rice, broccoli and sometimes soyrizo, best lunch ever.

I like to make a big batch of something that's easy to reheat at work on Sunday, like chili or pasta or something.

No, that's pretty much it, I'm incredibly lazy and not a "foodie" by any means, just three cans of refried black beans, about one cup of brown rice, one package of Soyrizo(cook it with a can of black beans to make it go further) and like two lbs of broccoli that I steam. Best part is it's like 15 bucks for a week of lunches.

There isn't a gluten sensitivity/intolerance, you either have celiacs or you don't. It's been shown that it isn't gluten but we aren't sure what it is in wheat.

FWIW z2 is a very broad zone, and 3hrs near the top of it should be a moderately difficult effort, but do-able any day of the weak unless you're real tired. I do agree with that last sentence - with experience, HR/Perceived Exertion (PE) becomes pretty solidly calibrated, and you can tell what your HR is by how you feel.

i would say i was 90% of the time in the 65%-70%range , but i wasnt really letting it slip below 66% for more than a minute
i think just being more aware of my hr:effort is gonna help me more than anything on big rides, but obviously this is only my second go round with zones so there isnt much to see in terms of progress, nor have i gone on any real rides since i started messing around
i havent done any intervals or anything yet but so far i dont hate it as much as i thought i would

Basing zones off of max HR is wack, as it is highly variable from individual to individual and day to day. Therefore, any formula used to determine it is also wack, like 220-age or whatever. I'm 28, and I can ride at 220-28 (192bpm) for nearly 10 minutes.
If you're ever interested, I recommend the Joe Friel method of HR training: setting zones based off your Lactate Threshold Heart Rate (LTHR). The test is quite awful though, 30min all-out, take average of last 20min to be an approximation of LTHR. Than set up your zones based upon that. For example, if I rode 3hrs pretty hard I would aim for like 85% of my LTHR.
The upside to that awful test is that if you stay relatively fit/active, you only really need to do it once, as your HR zones don't change unless you become a couch potato for like 6 months. I trained this way for years until I got a powermeter about 18 months ago. The powermeter is totally objective, but because it's a moving target you get the joy of having to continually re-test .
