Which Bike to Convert??

I have an early to mid 90's CF Giant and a Centurion Ironman Dave Scott, and I want to make a SS out of one of them. Which do you think would be better?

SS...neither,

Fixed-gear...both.

Fixing up a Centurion today. Had it powder coated a nice ugly Home Despot orange. Such a sweet old frame, finally getting the attention it deserves.
