I forgot ... soup! From the plain chicken broth and noodles to the complete Minestrone, soups are great for hydration and that warm and fuzzy feel. I like them for breakfast and supper. On a cold rainy day, I might have one for lunch when I can cook under a shelter.

Couscous are great and pretty efficient for the alcohol stove use - 5 min in boiling water then sealed in the pot for 10-15.
Noodles in any form are great, Rice noodles from the Thai Kitchen are good as are any pasta - fresh if you can get it. I want to try some Indian MREs in my next tour and see if I can't make some sort of pancakes in my little titanium pan/pot lid.
Buying before you camp is a great idea if you can pull it off. If you to than making Mac-n-Cheese is pretty reasonable, especially if you drink milk. You can cut the butter or use the olive oil you should have anyway. Or buy a package that you just add water too. I always have bread and peanut butter with me, a complete protein as mentioned and great in a pinch. Several times I ate PB&Js in the tent in torrential rain. I bring green tea as well which I enjoy after dinner. I kept bread, PB, oatmeal, coffee and tea at all times. Plus at least a days worth of energy foods - GORP, Granola bars etc. Daily I would buy something for dinner thus allowing fresh foods and minimal carrying of the heavy items.
(oh and I never regretted carrying my hip flask of whiskey for even a moment)
