touring/road bike

I am going to build up my new surly crosscheck frame soon and I was wondering if I should go with the ultegra sti's /105 hubs I already have and have it as my only geared road bike or invest in some 9 speed bar ends and xt hubs and make it a bomb proof touring machine? I just dont know. I am planning on touring from Boston to N. Carolina in june and Up to Vermont/New hampshire for a weekend trip.

If you are into loaded touring and the 105 hubs are 36 hole I'd use them as they are definately above average, only one level behind XT. I'm building a LHT now and am using 105 STI's as I have used them on my road bike for the past 5 yrs with no troubles whatsoever, approx 10,000 mi. I have never tried bar ends but I love the way STI's work.
