Where is it safe to camp?

I am planning a Tx. to Va. ride and the distances between campgrounds is rather large. For those who have done this what is your advice? Also what is the police like when you do this? I will have my dog in a trailer packing gear and panniers!

Approximate route?

Why don't you give us an approximate route? For instance, I live in New Orleans, Louisiana. Do you plan to cross LA at all? or are you farther north? If you plan to cross LA, will it be north LA, central LA, or south LA. Maybe you could look offer possible highways you are looking at as well as towns, say west, middle, east side of each state. With some idea of where you will be going, perhaps those of us in each state could offer some advice. I, personally, have not done any highway riding yet, but I belong to the local bike club which does a couple of country rides each weekend, primarily routes just north of Lake Pontchartrain. Several members have ridden in other parts of the state as well as Mississippi. They also know cyclists in other areas. I would be glad to pose your question to the club, but it would be helpful if you could narrow down the area of consideration some.
We might also be able to offer some suggestions on routing. There are always tradeoffs, of course. Depending on where your are starting, for instance, a geographically direct route could take you throught the northern parts of Louisiana, Mississippi, Alabama, Georgia, even Tennessee. Those areas can be quite hilly. Eastern TN and western North Carolina contain the Smoky Mountains. Not the Rockies, but still probably quite a challenge on a bike. A route closer to the coast across LA, MS, AL, GA then north through SC, NC to VA would be relatively flat, but longer. But it might not take any longer because you might be able to cover more miles per day. Kind of depends on what kind of experience you are looking for.

I should have mentioned your advising us when you plan to make this trip. For the next couple of months a ride along the Gulf coast would be quite pleasant, after that it will be getting pretty warm and EXTREMELY humid.

I might be able to help with VA
Sounds like a pretty cool ride. Modesty prevents me from pointing out that Va. has some of the best cycling in the US. 
Depending on how set your plans are, I could tell you about some places or routes you might be interested in. You might also try doing a web search for bike clubs in cities along the way and send them email. They might be able to hook you up with some good dos and don'ts for their area.
