On many tours I've carried a 5 piece travel fly rod along with some basic flies and on more than one occasion I've added fish to my evening meal, but I would not want to rely on it. You can now purchase your daily state fishing licenses online so that makes it easy. Though living off the land sounds really neat, in reality it would be quite difficult and you most assuredly would be riding on a caloric deficit.

On my solo 1000+ - mile 'tour', I stopped at roadside produce stands during the days' ride, but ate at a greasy spoon restaurant (or McDs/Burger King/other fast food) for dinner every night. Breakfast was leftover produce from the day before, and a couple of packets of dry oatmeal. This late-summer 'tour' was five days/450-miles there, five days back with a week of visiting family in between and where I was well fed!
