I have been a vegetarian off and on for 35 years with a lot of those years being strictly vegan. Since 1993, I have eaten seafood occasionally but have not consumed any other meat at all in that time, and have never craved it. During my "most productive" touring years in the mid to late '90s I was vegan and seemed to manage fine - I ate(and still do) a lot of beans, tofu, olive oil, lentils, breads, nuts, fruits and vegatables. Whether I'm on the road or at home, it is VERY hard to find truly vegan meals in restaurants or cafes - even veggie burgers are usually cooked on the same grill as meat burgers and thus are not really vegan. The key when touring is to think ahead - when you are in a town or city of reasonable size, be sure to stock up on vegan proteins and fats that will keep your body going until the next big centre.
Good luck!!
