The "small" gear is 24/25. The bigger tooth count is in the rear. Endless Cogs makes that giant 25T cog, and with the cogs mashed right up next to each other on my cassette hub, I have a perfect chainline to the two chainrings. 24/25 and 31/18 have the exact same number of teeth, so my chain length remains identical.
So, when I want to "switch gears," I undo my QR and the tensioner (about to be replaced with a Surly Tuggnut) just pops out. I move the chain by hand, and then pop the tensioner back on, and do up the QR, and I'm good to go with a climbing gear. I only use this ratio 5% of the time, but when I'm staring down a steep mountain climb, it is excellent to be "mountain-capable."
I love singlespeed. This setup neatly overcomes a major limitation without sacrificing simplicity, durability, reliability, etc. If anything, it's more reliable, since I have an extra ratio if I bend a chainring or something!

I think clear would work well with that bike. I like the Specialized water bottles as they seem to be the defacto bottle used for shops and places to put their logo on them. Here is a nice one on sale from REI:

I also prefer to travel lite. Did you weigh your load? On a hotel ride of 550 miles, I only had 23 pounds with me. My next ride, dammit, is mostly camping. Haven't packed yet. Going to have my sleeping bag on the front handle bars with a support device made for that. My back side will look a little like yours. I can't use my front forks.

My 2014 Randonee loaded down with all of my cr@p on a 50 mile training ride yesterday. I've upgraded most of my gear this year and most of it is lighter than what I replaced it with. Now, to get me a little lighter!!!

For whatever reason, this bike simply rides better with the front load mounted higher. Steering is twitchy when my panniers are mounted lower.
