Just if you must put bulky things in your Bike panniers, they may not fit..
I haul my Roland amplifier and electric instrument in its case, on my bike trailer,
A friend tows his 88 key stage piano to gigs on his.
I doubt the OP will want to pack his Dog in a Pannier..

Has anyone taken the Aosom trailer cycle touring? Most of the reviews I see are for folks using it to cart things around town, but it's impressive weight capacity and extremely low price (despite it's weight) has me angling towards that instead of the traditional BOB / Burley route. It's worth noting it's 1/3 the price of a BOB Yak Plus.

I'm thinking I might do a 3 to 4 day unsupported tour this year. I have a mtb I'm thinking of using for this tour that has disc brakes and a suspension fork up front. This kind of precludes the use of racks, or at least makes it more difficult.
I'm thinking a nice trailer would do wonders....oh, and if I get a trailer, I'd really like to be able to put the dog in the trailer too....I could use it to take the dog to the daycare when commuting.

Up until I get to it's load max of about 100lbs, it's not really noticeable, and only slightly changes my turning radii. I love taking my dog up to Forest-Park and I've never had a problem with navigating the narrow car/motorcycle preventive bollards.
I do recommend that if you are going to put the dog in the trailer, that you take him on a few rides to get acclimated to it, my dog jumped out once, but he learned quick! I also personally prefer to have him in a walking harness which I then latched to the top/cross bar so that if the trailer were to turn, he'd (in theory) be held in the roll-cage area.

Personally I hate the way that heavy panniers change my bike handling. I'd rather carry the weight on my back or, (better yet) in a trailer. And let's be honest, there's no way you'd be carrying that tree strapped to your rack...

It really also depends on the caliper mounting. Lots more manufacturers these days are putting them in the chainstay/seatstay junction which allows you to use a regular rack.

And there are work arounds, such as spreading the rack wider,
on the left side, to clear the disc Mech, with a stand off spacer.
Enough bikes are coming with disc brakes , on them,
to make offering compatible disc brake racks a reasonable proposition.
But that still leaves out the OP's Dog.
