I'll buy a Kona Dew plus but I really don't know which one should I pick. Are there any difference instead of the color?

Also I think I'll change the flat bars to drop bars, it's like the kona dew drop. Any suggestions how to do that? I'm a noob,so this will look like a silly question. Do you have to change the whole brake system to change bars? It has disc brakes so I can imagine it will be a big work
