I've ridden the wheels for awhile. They're pre-Eastons, Velomax. I put new bearings in and had the wheels trued. They are still perfectly true with ~700 miles. That's including off road. Really I don't see an additional 30-35# stressing things that much more, but will carry extra spokes for the back.

That's good to hear that you've ridden with them for a while with no problems. Use common sense for going over rough stuff and maybe don't use narrow high pressure tires, that's easier on spokes a bit also.

Yeah tires are 32mm and could go wider, but haven't found a reason yet.

I have a Shimano Sora 30/39/50T crankset with a Shimano Deore 11-32T Cassette - would I have any problems shifting if I added a 26T granny gear to it?

prob not. Your front derailleur should be fine with the change, like what I did with my bike. Your fd is prob a sora, mine is a tiagra fd and it didnt need any adjustments, ask at a bike store or do it yourself and see.
