I tried making energy bars. Anyone have a better recipe?
I'm allergic to peanuts, but even Apple flavored Powerbars have peanuts, and most recipes for energy bars seem to use peanut butter as a binding agent.
I made a batch of https://www.bicyclesource.com/apricot_oat_cake_recipe , which are way too sweet. They taste like gatorade. Mine also came out as a gel, not a bar.
Do you have a recipe you've used for energy bars that are free from peanuts and chocolate?

Allergic to all nuts or only peanuts? Try sub'ing almond butter for peanut butter if you can eat other nuts. You usually need lots of sugar for a binder, often in syrup form.
Cptips has some recipes. Don't know if they call for peanut butter or not.

Here's a "maple walnut" recipe. No chocolate or peanut butter, and walnuts are optional.

I sometimes make this which is real simple. Ghetto Oatmeal Cookies.
Ingredients:
Quaker Rolled Oats
Fat free Milk
Honey
Take however much oats you want and put them in a blender. Blend them untill they turn into a dust.
Pour oats into a bowl.
Mix in just enough milk so it turns into a thick goop.
Mix in a bunch of honey.
Scoop out cookie sized pieces and you can eaither cook it like pancakes in a pan (thats what I do) or bake them in an oven.
They taste great, are real simple to make, and are not messy to eat on the bike. If you are actually good at cooking i am sure you could make the recipe better. Or you can add raisins or other things to it too.

Hmm, I wonder if I can basically make oatmeal with fruit and nuts, add brown sugar to make it gooey, and bake it into a bar. It's worth a shot. I'll report back with my findings, after my current batch of oatmeal/apricot jello runs out.

I started a long thread about this a year ago.

I made a pretty nice energy 'bar' the other day, although it was more like a flat cake.
It contained
A handful of Oats
A couple or three handfuls Wholewheat chapatti flour (that's the only brown flour I had in my cupboard at the time)
2 Bananas
Some syrup
About a teaspoon of protein powder
Some cocoa powder
Baking powder.
It tasted pretty good, but not chocolatey enough. In future I'd stick some actual dark chocolate in there (70+% cocoa) and some dried dates and figs perhaps. Maybe even leave out the chocolate and cocoa and put more dried fruit in there.

I made these the other night. I basically went to Trader Joe's, bought a bunch of crap, mixed it all up, and stuck it in the oven. I'm not particularly a cook, so this can probably be improved upon.
Everything is from Trader Joe's, but substitute as you see fit.
Ingredients:
3 cups of old-fashioned oatmeal
1 1/2 cups of T.J.'s Multigrain Baking and Pancake mix
1 tsp. salt
1/4 cup flaxseed meal
2 eggs
12 oz. Agave Nectur
1/2 cup packed brown sugar
1 tsp. Vanilla Extract
1/8 cup Peanut Oil
1 cup nonfat plain yogurt
1 cup wildflower amber honey
8 oz. bag of Goldenberry Blend (Raisins, and dried Cherries, Cranberries, and blueberries)
8 oz. bag of Pignolia, Pepita, & almond such and such (small mixed nuts)
8 oz. bag of sliced unsalted, dry roasted almonds
Mix together in a big bowl.
Pour into an oiled and flour a 9x13 glass pan.
Bake at 350 degrees for 50 minutes.
Cut into even pieces while hot with a pizza cutter. Let sit until the next day to cool and solidify. Wrap individual squares in Saran wrap and keep in the fridge.
They taste really good (5 people tried them and 5 liked them). They're a little sticky, but when wrapped in saran wrap and kept in the fridge they're not messy to eat. I tried to pick ingredients to give a mix of carbs/protein/good fats and also high and low glycemic index. All in all, this is my first shot at these and I know I'll be doing it again. Let me know what you think.

Dates
Almonds
Cashews
Walnuts
Flax Seeds
Hemp Seeds
Sunflower Seeds
Pumpkin Seeds
Raisins
Dried Cranberries
Coconut
Honey
Maple Syrup
Cinnamon
Nutmeg
Allspice
Vanilla
Sea Salt
Blend all the nuts together into a grainy meal. Separately blend the dates, spices, honey, sea salt and maple syrup adding a bit of water if necessary. Sometimes the date fibers can be a bit tough. Add the date mix to the nut flour mix and fold in the rest of the ingredients. Press into a baking dish and chill in the refrigerator. Delicious!

I'm also allergic to peanuts...although I think my allergy is ultimately one for mold, and peanuts I believe are a somewhat moldy nut. Eating them doesn't do anything crazy to me, but consistently gives me a rogering headache that will last 1-3 days. Enough for me to avoid them.
I use Soy nut butter from Trader Joes. Tastes good, and similar enough to peanut butter that it works as a perfect substitute.
I was going to make a recipe of some basic energy bar oat cakes the other day but couldn't find the recipe. I'll look some more. Great to have around. Bake them up and toss the extras in a bag in the freezer. Just pop one into your pocket before a ride and off you go.
