For dehydration dry thirsty mouth, dark smelly urine, headache, dizziness, and/or higher HR.
For bonking you feel weak like hypoglycemic with low blood sugar levels. At this point, you may start shaking, have blurred vision, impaired coordination, or dizziness. Your speed decreases.

Dehydrated = HR up at same effort (RPE). Bonking = HR down at same effort. Both at same time = bad.
