I think the saddle looks good as-is. I'll add black hoods with white Fizik Microtex tape would look stellar IMO

Everybody and their dog has black seats and hoods. Brown isn't all that common on most bikes now days. Brown is sharp and adds a certain something that make people notice though they may not be sure why. See exhibits a, b & c. Black would make the bike look mundane. On a beautiful vintage bike like yours, brown would really make it look spectacular. All of this is of course my opinion which may or may not be worth much.

I say brown hoods, black tape, silver cables will really tie the room together.

If you plan on keeping that saddle, then the most understated but classic look would be the black hoods, black tape and either black or the old-fashioned silver cable housing. (OK, technically that is clear-over-silver-colored metal housing, but I've had another C&Ver tell me it looks just right on one of my vintage rides)

You want the understated and classy girls to run after you, right, not the tarted-up harlots?
