I eat a gel 15-20 minutes before leaving on my ride and then one every 30 minutes, it works for me.

You eat too much. Zero gels, unless it's for your hair

I'd quaff an imperial pint of stout and call it good.

To answer the OP's question seriously. You start with the proposition that your body can store enough muscle glycogen for about 2 hours. (this will vary on how well trained the individual, and how much of that 2 hours you spend above your aerobic threshold).
So for rides of less than 2 hours, you really don't need to eat anything.
If you're doing a hard set of intervals, popping a Gu, before your workout, can help with the workout, particularly if you haven't eaten recently. So one Gu before a hard short ride is not a bad idea, particularly if you're not trying to lose weight.
For rides beyond 2 hours, you'll eventually go into a calorie deficit, that will make it impossible to ride above a very slow pace. You want to delay this as long as possible by taking in as many calories as possible from the beigining of the ride. You typically can burn about 600 calories an hour riding, (more or less depending on siize and fitness) but most people can only consume and absorb about 250-300 calories an hour.
So on long rides, you want 250-300 calories an hour, whether they are from gels, energy drinks, power bars, or real food. You need to experiment on long rides to see how many calories you can process, and what foods you tolerate.
