Are you bringing a stove? If I were you I would pack 5 or 6 peanut butter and jelly sandwiches, a couple of bananas and maybe an orange for the day rides. I'd bring two packs of instant oatmeal for breakfast. For dinner I'd bring a can of chick peas in a bag, some rice, an onion, a bit of tomato paste, some spices in a bag, and cook up a beans and rice scenario.
Is there water at the site? I would want at least 6 liters of water over the course of two days, including camp use, but I almost never carry that much at one time. It is also depends how hot it is, how hard I'm working, etc. I don't usually ride where I don't have access to water, so I'm not sure.
I wouldn't over think it. Have you done a 60 mile ride before? What did you eat before, during, and after? Times that by two and you're good to go.
