As to the Dan's adapter on the Puch- I think you might end up with the brakes mounted too low to hit the rim correctly. The adapter is designed to clear fat mountain-bike tires. Besides, running V-brakes means you'd also have to install "long-pull" drop handlebar levers, like the Dia-Compe 287-V's or Tektros. Not impossible, but an additional expense.

In my experience, V-brakes are a little mushier than correctly set up dual-pivot sidepulls. Longer reach means more mush, too, but long-reach dual-pivots are available. Maybe these will fit:
