There are Sushi Ota and Surfside Sushi mid-town area; there's also Kaito in Encinitas. If you can read Japanese and don't mind paying over $100 per person excluding alcohol, then Shirahama on Convoy. These are the fancier traditional sushi type places; which you normally don't go for California rolls, etc. Even if they serve it there, it will be too expensive.

For all-you-can-eat, Tadashi Sushi in La Jolla Cove is nice.
