Also i was wondering what chainring to use, i am using the larger one now on my ss so i know if i use the bigger one i have to leave them both on which isn't very sexy.
You can buy short stack (also called single stack) chainrings bolts at nearly every "hip" LBS.. Using them allows you to use only one chainring and get rid of that extra piece of metal bolted to your frame.

Anyway any advice would be great i've been riding ss for a while and am looking forward to going fixed.
You may need to respace and redish your rear wheel to get the correct chainline / wheel alignment.

Also, do you have horizontal ("good") or vertical ("bad") dropouts?.

And finally, use a brake until you are very comfortable riding without one. It is cool to yell "OUT OF THE WAY, I GOT NO BRAKES" while bombing a big hill, but it's less cool to go splat into the side of a bus because of it.
