When are you going? August will be very crowded. Sept/Oct is perfect. I just spent 2 weeks touring the Alps of Austria, Slovenia, Italy, and Switzerland. You shouldn't have any problems with water. Potable water in Europe is very good out of the taps. Distances aren't ultra long and if you carry a couple of bottles you shouldn't have any problems. We were in the Sella Group and climbed the Stelvio and Bernina Passes so we went along some of the parallel roads. If you are going to stay in campgrounds they are clean with hot water for showers, usually a Restaurant and a store are part of the package. In addition most campgrounds have WiFi for internet connectivity. Local trains are a pretty good way to get from one location to another with a bike. Most have a car designated for bikes. Europe is a bike friendly place. Good luck and have a wonderful time...I am going to take a month the next time I go.
