As was stated above... your MTB frame will only take 26" tires... no way you can fit 700c wheels on a mountain bike frame. You'll have to stick to MTB wheels, but you can get a decently light set of wheels and a set of 1.5" wide slicks and a rigid fork and you should be good to go. You'd actually be fine with just the 1.5" slicks (or narrower if possible) and the rigid fork. But in a sense you can't "convert" your mountain bike into a road bike. You might also want to swap out your rear cassette for a road cassette. I have a 12-26 cassette on my mountain bike.
