We have some left over sauce from Christmas dinner (the sauce is apricots, prunes, apples, shallots, butter, ruby port, pork pan drippings thicked with arrowroot powder), so my wife asked me to cook a pork tenderloin. I really think she wants me to cook that so that I have some left over pork for making escarole soup, but that is another story. The tenderloins are marinading in lime juice, ginger and teriyaki sauce.
Water is on the boil for making potato salad. Pretty standard fare, except I put in a lot of lemon zest and juice.
Also making sautéed chard with pine nuts and craisins.
