High End Wheel Upgrade

I likely purchasing a Project One Trek 6.2 or 6.5 and want to upgrade the wheels
Want something all around and probably carbon

$1000 to $1500

I am 5'6" and about 135 so deep rims and very aerodynamic is probably not for me

Any suggestions?
