Definitely, I have over a dozens wheelsets that I keep stored outside at my place. The only issue is wiping the pollen off them when I grab one that hasn't been used in a while.

I am assuming it's not going to get rained on, but even then you'd probably be all right, you'd just want to make sure the bearings were good before riding.
