How long should the Ball Bearing's last assuming that they are serviced properly ?
1) Shimano Ball Bearings are always steel. Grade 25 Bearings are the way to go.

2) Yes. I have even heard of people who serviced their hubs by tossing the retainers and using just the ball bearings.

3) Like a lot of things, it depends. If you don't let water into the hub, and if you are on top maintenance-wise, then the bearings are gonna last a long time.
