Dynamos generate AC current so you need to rectify it to DC before you can power the LED. You will probably also need to condition the DC current with a capacitor and regulate the voltage since a bike dynamo can generate a lot of voltage at times. I measured up to 41 volts from a bottle dynamo. Look in the electronics and lighting forum; there is a lot of good advice and circuit diagrams you can use.
