For a 4-5 day tour (or even a week), I probably wouldn't bother with a rest day unless there was something really interesting to do in the middle that you wanted to spend all day doing.
Regarding the Ohio Pyle ... why not cycle there this weekend if it is that close?
I think I'll make the Ohio Pyle ride my test tour on Labor Day weekend! It'll be a great way to get the feel of the slight grade the GAP has going east bound (I live about 20 minutes from the West Newton GAP access.)
