Only one set? Kinlin XR-300 rims, Sapim CR-Ray spokes, Alchemy Elf/Orc hubs (or other hugh quality) 24f radial, 28r 2x. Honestly I wish Kinlin would update their offerings to wider rim profiles as is seemingly becoming a new standard. I would assemble them myself.
Edit: Just saw the $500 price point. You won't get into the Alchemy hubs at your price point so swap the hubs for Formula RB66/210, bicyclehubstore.com Superlight hubs or Soul Prodigy hubs (though I don't know if you can get them in 24/28).
