Depends on your definition of "mancation" there is always "Vegas Baby!" Many men have lost their innocence in this vicinity. But it can also be a great adventure. the weather is usually moderate.

Phoenix is usually about 5-7 degrees warmer than us. The Black Canyon Loop, Sonoran Trail, White Tanks and South Mountain Park have incredible biking.
Las Vegas IS on our short list. Seems to be a football game down there of interest to us. (GO BRONCOS!!!)

My wife and I spent a week down in Sedona last year, and we took my street plated XR650R, as well as our mtn bikes. Did a LOT of exploring on the XR (We thought Jerome was pretty cool!), but mostly blasted around town on the mtn bikes.

Phoenix also sounds good, as we have some connections down there. Definately a warmer destination, but also a bit farther away.

The BIG plus to Las Vegas or Pheonix over Moab/Fruita is that one of the guys might only be able to get away for 4-5 days, and might need to fly back earlier than me and the other guy want to make this trip last.
