Bikes: Specialized Rockhopper, Nishiki Custom Fixed Conversion

I didn't really want to make a new thread, since I have an IRO sizing question, so I thought I'd just ressurect this one.

Anyway, I'm 5'11'' and I THINK I have about a 32" inseam. I quite evenly proportioned, and don't have longer legs, or a longer torso. A bike guy said my arms are a bit longer than average for my size.

Anyway, he pegged me for about a 56 or so, if I wanted a "proper fitted" road bike. I've heard that the IRO frames tend to run a bit small, and I'm wondering if a 59 Jamie Roy would be too big for me.

I don't know much about geometry, or any of that, so I can't really figure this out on my own. Looking at charts, I would fit on a 56-58 bike. So, since the IRO run small (if they actually do) could I use a 59 comfortably? I'm asking cause there's a used one for sale.
