My suggestion is to bring a bag and a ton of liquids, go out as far as you can biking, then bike back to your place. Do that several times a week. Try to push yourself a little further each time. That will build up your endurance specifically for biking. Going through different terrain on the mountain bike will help you also. It won't be as fast as a roadbike, but I think its a good thing for training.
