this is essentially what i did for a road bike conversion to singlespeed.

the wheelset i had was meant for a 6 speed threaded freewheel. i simply took a spacer from the driveside and added it to the non drive side, then redished the wheel to center.

chainline is perfect, and no problems with the redishing after a year or so of riding.
