Bikes: '96 Litespeed Catalyst, '05 Litespeed Firenze, '06 Litespeed Tuscany, '20 Surly Midnight Special, All are 3x10. It is hilly around here!

Your question is impossible to answer accurately without seeing you and doing some measurements. It's more than just overall height. Leg length (i.e. cycling inseam length), arm length. preferred riding position and style and flexibility all matter. If I HAD to guess, I recommend a "size 522" based mostly on top tube length but that may be way off for you. As to stem, bar and crank length, not a clue.

You really should visit an LBS with a decent fit kit and someone who knows how to use it. Pay what it takes to get the sizes right the first time or just guess and pay what it takes to replace your mistakes.
