That steelwool is a fabulous commuter! It will look sharp with a classic saddlebag. What you have there is pretty much what I'd love to have. The Alfine 11 with brifters - that is awesome! Disc brakes in Western Washington - that would be so perferct! I think I'd add a wheel with a dynamo hub. Happy rides!!!
