If bar mounting/positioning is a hassle with older quill stems for you, you can try and find hinged clamshell style stems that were available though the mid 80's into the 90's. They mostly retain the prettier and more traditional looks of older stems, but also are more convenient to use than the old closed clamp ones....

The two stems at the top (Mavic) and bottom (ITM) of this pic are hinged stems I currently have mounted on my Peugeot PSV and Alan Carbone respectively, and they have worked well for me and I find them quite convenient whenever I need to service/replace anything on the bar, as I just have to use an allen head wrench and the bar is off the bike without having to remove the stems or the bar tapes.......
