The RFLKT+ also has more memory for more screens AND is also has a barometric sensor that greatly improves the % grade measurement. I think it also has temperature. Cyclemeter uses all of these.
Since I have wahoo hr strap and speed and cadence sensor, I'm assuming I do not need the ANT+ that comes with the RFLKT+. Lastly, I'm hoping I can connect my bluetooth headphones while everything else is connected for use with the RFLKT. No one at Apple has a clue about these devices

Your BT headset will work just fine wile the rest of this stuff is running. I frequently use my Aftershokz bone conduction headset (highly recommended for use while riding) when using most of this stuff. It's also BT and works great.
You will find that battery life can be challenging for longer rides. Then a battery to charge your phone can be handy. I found this one which looked interesting.

I use the ibattz Refuel pack but I don't think that would work for the iPhone 5C only the 5/5s
