Bikes: '96 Litespeed Catalyst, '05 Litespeed Firenze, '06 Litespeed Tuscany, '20 Surly Midnight Special, All are 3x10. It is hilly around here!

That's where you start to loose weight. Those have to be the heaviest 700-35 tires I've heard of. You should easily be able to cut that weight by 300 grams/tire.
