The tools have changed - i.e., the digital darkroom (Photoshop) has replaced the analog darkroom, pixels have replaced emulsion - but the techniques that [MENTION=382113]franswa[/MENTION] mentions - dodging, burning - have existed for almost as long as photography itself.

That said, I, too, agree that I actually prefer the original to the retouched file, which to my eye looks hypersaturated. Of course, a lot of that comes down to personal preference
