We saw a few while riding in the Veneto region two years ago, including a nun in full garb and some women who had ridden to a local market to shop. One day we had a female ride leader. But on the "sport" side, it was definitely male-dominated by far. In fact, when we saw groups out for traditional Sunday rides I don't think anyone of them included women.
Nuns on bikes! Excellent. We saw some nuns (wish I could remember which town / church) leaving in all-white habits with pink crocs and yellow baseball hats put on over their wimples. I'm not really sure what that was all about.
I should have clarified that I was referring to "roadie" style riding. There were people of all descriptions riding dutch style bikes around town. Tourists, locals, grandmas... you name it.
