Creating Custom Map

So in previous threads I learned to import GPX ACA maps into google maps and and layer them with nearby cities and National Parks. Now I would like to create a custom map showing the route I plan on taking and with some points of interest for my blog. I tried to shorten the ACA routes so that they would not show the portions that I was not riding. However, this would require me to delete thousands of individual GPS points. Next I tried typing in two destinations in google maps and then dragging the route to mirror the ACA one. However, I can only do this for short distances and I ran out of layers quickly. Also, it won't let me follow the off road portion of the GDMTBR. How do I create one?
