I don't think I've ever discussed the saddle on a used bike that I was buying, although most bikes I purchase do require some tuning.

My Bike Friday needed disassembling for packing, and so I asked the seller if he wanted to keep the plastic pedals (and I still paid the asking price).

I agree, fix up the bike like you want to sell it and post photos of the bike as it is for sale. No dickering about the saddle.

Did he actually pay for it a week ago? And after riding it for a week, ask for a lower price? And you apparently acquired replacement parts for him? Something is a bit off with that.

Anyway, just clean it up and move on.
