I had the same criteria when I was looking for panniers for my Nishiki Cresta. I ended up going with the Ortlieb Front Roller Plus in Hazel. The material looks like canvas and really works with vintage bikes. The bike as shown is fully loaded for a short tour where supplies can be purchased on the road. If I was to go on a longer trip away from re-supply I'd add the same panniers up front for food and water. In 1985, this bike was fully outfitted with Red Cannodale panniers just like @The Golden Boy. That set is long gone sadly.
