Only advice I can give you is to try and find a shop that deals in C&V stuff to get an accurate estimate, or at least a shop run by an old guy that has been into bikes forever. I doubt any of the kids that work at my local shops even know what a 600 Arabesque set is.

Not knowing your state, I can't comment on the 80% of value bit, as insurance rules vary drastically between states. It wouldn't fly in Michigan, though.
