Still fiddling with the stem position, not sure if I made the right call with the +/-17 degree stem, but it feels right for now. I am going to build a coaster brake wheelset for this eventually, but overall I am really happy with the way it turned out. Fire away!

I know your pain. I have my rear axle about half out of my fork end, and when I'm set up for CX (obviously not ideal) but it hasn't been an issue at all and allows for tons of clearance at the brake.

Alternatively, you could run 32's and probably be ok at the seat tube I suppose.
