What's the deal with fried eggs on burgers?
I first encountered them in Longview, Washington during the Winter of 1981 while visiting there on business. A burger called the Kitchen Sink. Not an exaggeration.
It makes sense really. The yolk mixes with the fat from the beef and buttering the bun and creates a rich sauce for the burger
in situ akin to a broken Hollandaise. It just tastes good...besides going well with the bacon.
