Regardless of POV, few like to see more than 30 seconds of someone else riding anyway. Some do it well however - as you said, several different POV to create a cohesive video. I like the one's done by
Gravel Cyclist. [MENTION=303015]Mumonkan[/MENTION] had the right idea a while back - very short vignettes shot and edited on the fly. Even at 12 seconds this one is long.
A couple of locals have been talking about documenting some of the more popular routes in our area so that people can get a taste of the ride before driving half way across Atlanta for a group ride. The mount might be passed around and used by several riders for that purpose.
