Go with the Ultegra cluster and make sure you get a decent chain to go with it (HG93 is it? I can never remember). They last heaps longer than the 105 gear.

Put new cluster on you training wheel at the same time. Change the chain every 2500-3000km if you are going to be swapping between training and racing wheels. Change the training cluster every three or four chain changes***, or immediately if you start to get slip.

[note] this will vary depending on the load and abuse that the drivetrain is subjected to. In extreme conditions (eg. lots of training in the rain) you might need to change the cluster on the second chain change.
